Freshness

Freshness is an integral part of the quality of your final cup. In our opinion along with the quality of the actual coffee bean and the roast process it’s the most important factor. Usually a pretty good but extremely fresh coffee is, for example, better than an old exceptional coffee that has turned stale.

A note on freshness here: When we talk about freshness it is the time from when the coffee bean is roasted to when the coffee drink is prepared, not the time from when the coffee bean was farmed to when it was roasted. While the latter matters as well, it’s nowhere near as important as the time between roasting and consumption.

What this means is that ideally you should receive your coffee from a local roaster because the flavor will be so much more intense. V. When you receive your coffee 2 – 3 days later it will be the ideal time to drink it since it takes a couple of days after roasting to unfold its full flavor.
